MOON MILK

INGREDIENTS:

1 cup Milk of choice

Use unsweetened almond, oat, coconut or cashew milk as the base. Each brings a unique flavour and texture, while providing a smooth, creamy consistency that blends beautifully with cacao and warm spices

1/2 teaspoon Amara Spices Ceylon Cinnamon powder

Adds delicate warmth and natural sweetness with subtle woody and citrusy undertones.

1/4 teaspoon fresh ginger, grated

Introduces a fresh, zesty warmth with a mildly peppery and pungent flavour.

1 pinch Amara Spices black pepper, powdered

Contributes a sharp, pungent warmth with subtle earthy undertones. Freshly ground black pepper is recommended for a more pronounced aroma.

1 pinch Nutmeg powder

Brings a warm, sweet and slightly nutty flavour with delicate woody notes.

1 pinch Cardamom powder

Adds a sweet, floral and refreshing aroma with subtle citrus-like undertones.

1 teaspoon Coconut oil or ghee

Adds richness and a smooth, velvety mouthfeel. Ghee provides a subtle nutty aroma, while coconut oil contributes a mild tropical flavour.

1 teaspoon Raw forest honey or Maple syrup

Adds natural sweetness to balance the warming spices. Forest honey offers deeper floral and earthy notes, while maple syrup provides a gentle caramel-like sweetness.

INSTRUCTIONS:

1. Add the milk and spices to a saucepan

Pour 1 cup of milk into a small saucepan.

Add the Amara Spices Ceylon Cinnamon powder, grated ginger, nutmeg powder, cardamom powder, and Amara Spices Black Pepper.

Use a small saucepan rather than a large one. It gives you better control over the heat and makes whisking easier.

2. Warm the mixture gently

Place the saucepan over medium-low heat.

Whisk continuously as the milk warms. This helps the spices mix into the milk and prevents clumps from forming.

Do not bring the milk to a boil. A gentle simmer is enough. If the milk bubbles too hard, the flavour can turn slightly harsh, and some plant-based milks may separate.

You are looking for steam, warmth, and a soft spice aroma.

3. Let it simmer for 3 to 5 minutes

Let the mixture gently simmer for 3 to 5 minutes.

Keep whisking often. The short simmer gives the cinnamon, ginger, cardamom, nutmeg, and black pepper time to infuse into the milk.

The colour will deepen slightly, especially if you use oat milk, dairy milk, or coconut milk. The drink should look warm and golden, with tiny spice specks visible.

4. Remove from heat and add coconut oil or ghee

Turn off the heat.

Stir in 1 tsp coconut oil or ghee while the milk is still hot. Whisk until it melts fully into the drink.

This step makes the moon milk feel smooth and rounded. Ghee gives a rich, traditional flavour. Coconut oil keeps it dairy-free if you are using plant-based milk.

5. Let it cool slightly before sweetening

Let the moon milk cool for a minute or two, until it is hot but comfortable to sip.

Now stir in 1 tsp raw forest honey or maple syrup.

Adding honey after the milk cools slightly helps preserve its delicate flavour. Maple syrup is a lovely vegan option and blends in easily.

Taste the moon milk. If you prefer a sweeter drink, add a little more sweetener, but keep it gentle. A bedtime drink should feel soothing, not sugary.

6. Pour into a mug and sip slowly

Pour the moon milk into your favourite mug.

If you like, strain it through a small sieve to remove ginger fibres. This is optional. Some people enjoy the texture and stronger ginger taste.

Sip the warm moon milk 30 to 60 minutes before bedtime. Keep the pace slow. This is not a drink to rush while scrolling or answering messages. Let it become part of a simple night ritual.
