ICED CINNAMON HONEY LATTE

INGREDIENTS:

250 ml unsweetened almond milk
Use full-cream milk for a richer drink, or toned milk for a lighter cup.

1/2 teaspoon Amara Spices Ceylon Cinnamon powder

Its gentle woody flavour complements the coffee beautifully, adding depth and a comforting spice character without overpowering the drink.

2 teaspoons Forest honey

Acts as a natural sweetener, bringing a delicate floral sweetness that balances the bitterness of espresso and the warmth of cinnamon.

1/2 cup freshly brewed espresso, cooled

Use freshly brewed espresso for a rich, bold coffee flavour and a smooth, robust base.

Ice

As needed. Larger ice cubes are ideal as they melt more slowly, keeping the drink cool without diluting its coffee and cinnamon flavours too quickly.

INSTRUCTIONS:

1. Brew the espresso

Brew 1/2 cup freshly brewed espresso or strong coffee. Set it aside to cool while you prepare the milk.

Cooling the espresso protects the ice from melting too fast. It also keeps the final drink properly chilled.

If you are in a hurry, pour the espresso into a small cup and place it in the fridge for a few minutes. Do not add it to the latte while it is steaming hot.

2. Warm the milk on low heat

Pour 1 cup milk of choice into a small saucepan. Keep the heat low to medium-low.

You only need to warm the milk, not boil it. Boiling can change the taste and texture, especially with plant-based milk. Gentle heat is enough to help the honey dissolve and the cinnamon bloom.

3. Stir in the honey

Add 2 tsp honey to the milk. Stir until the honey melts into the milk.

Honey can be thick, especially in cooler weather. Warming it with the milk makes it easier to mix, so you do not end up with sticky honey sitting at the bottom of the glass.

Taste preference can vary, so 2 tsp is a balanced place to start. For a less sweet latte, use 1 tsp. For a sweeter treat, add another 1/2 tsp after tasting.

4. Add Amara Spices Ceylon Cinnamon powder

Sprinkle in 1/2 tsp Amara Spices Ceylon Cinnamon Powder. Stir or whisk well.

Cinnamon does not fully dissolve in liquid the way sugar does. The aim is to disperse it evenly through the warm milk. A quick whisking motion helps prevent clumps.

Let the milk warm for a short time until it smells fragrant and gently spiced. Do not leave it unattended on the stove.

5. Take the pan off the heat

Once the milk is warm and the honey has blended in, remove the saucepan from the heat.

The mixture should look creamy and lightly speckled with cinnamon. It should not be bubbling hard. If it gets too hot, let it rest before moving to the next step.

6. Let the Cinnamon-honey milk cool

Allow the warm milk mixture to cool before adding espresso and ice.

This step matters. If the milk is still hot, it will melt the ice and make the drink thinner. Let it sit at room temperature for a few minutes, or place it in the fridge if you want it colder.

For the best texture, aim for a milk mixture that is cool or just slightly warm.

7. Fill the glass with ice

Add ice to a serving glass. Use enough to chill the latte properly, usually a generous handful.

Large ice cubes work better than crushed ice because they melt more slowly. If you only have small cubes, use a little extra and serve the drink right away.

8. Pour in the cooled espresso

Add the cooled espresso to the glass with ice.

Pouring the espresso first helps it chill quickly. You can also pour the milk first if you prefer a layered look, but the flavour will be the same once stirred.

9. Add the cooled Cinnamon-honey milk

Pour the cooled milk mixture over the espresso and ice.

You may notice a few cinnamon specks, which is normal. That is part of using real ground cinnamon. Give the drink a good stir so the coffee, milk, honey, and spice come together.

10. Stir and enjoy

Stir until the latte looks evenly mixed. Taste once and adjust if needed.

If you want more sweetness, add a small drizzle of honey and stir well. If you want a stronger coffee taste, add a little more cooled espresso. If the drink feels too intense, top it with extra cold milk.

Serve immediately while the ice is still firm and the latte is cold.
