CINNAMON SWIRL LASSI
INGREDIENTS:

1 cup Plain yoghurt
Use fresh, chilled, preferably thick yoghurt to create a creamy, smooth and refreshing base. Its natural tanginess balances the sweetness of honey and complements the warm notes of cinnamon and cardamom

1/2 cup full cream milk
Adds richness and a velvety consistency to the lassi while helping blend the yoghurt and spices evenly. Adjust the quantity slightly to achieve your preferred thickness.

1/4 teaspoon Amara Spices C5 Ceylon Cinnamon, freshly ground
Brings a delicate, naturally sweet and warm flavour with subtle woody and citrusy undertones

1/4 teaspoon Cardamom, freshly ground
Introduces a sweet, floral and subtly citrusy aroma with refreshing herbal undertones

1 tablespoon Wild forest honey
Adds natural sweetness with rich floral and earthy undertones.

Ice
As needed. Keeps the lassi chilled and refreshing while creating a lighter consistency when blended.

Mixed nuts, chopped
Adds a delightful crunch and richness to the creamy lassi. Almonds, cashews, pistachios and walnuts offer contrasting textures and nutty flavours.

INSTRUCTIONS:

1. Chill the ingredients
Place the plain yoghurt and full-cream milk in the fridge before making the lassi. Cold ingredients produce a fresher drink and reduce the need for too many ice cubes.
If you are preparing for guests, you can measure the yoghurt and milk in advance and keep them chilled. Grind the cinnamon and cardamom just before blending for the best aroma.
2. Combine the base ingredients
Add the following to a blender jar:
1 cup plain yoghurt
1/2 cup full-cream milk
1/4 tsp Amara Spices C5 Ceylon Cinnamon, freshly ground
1/4 tsp freshly ground cardamom
Ice cubes
Use a blender jar with enough space so the mixture can move freely. This gives a smoother, creamier result.

3. Blend until smooth and creamy
Blend the yoghurt, milk, cinnamon, cardamom, and ice cubes until the mixture looks smooth. The texture should be creamy, not frothy like a milkshake.
Stop and check the consistency. If it is too thick to pour easily, add a small splash of milk and blend again for a few seconds. If it feels too thin, add a spoonful of yoghurt and blend briefly.
The goal is a pourable lassi that still looks rich.
4. Add the wild forest honey
Add 1 tbsp wild forest honey to the blender. Blend again until the honey fully dissolves into the lassi.
Adding honey after the first blend helps it mix better. If you add it too early with a lot of cold ingredients and ice, it may stick to the sides or bottom of the blender jar.
Taste the lassi after blending. If your yoghurt is quite sour, you can add a little more honey. If the yoghurt is mild, 1 tbsp should be enough.

5. Pour the lassi into a tall glass
Pour the creamy liquid into tall glasses. Use chilled glasses if you want the drink to stay cold for longer.
For a festive presentation, do not fill the glass right to the rim. Leave a little space at the top for chopped nuts and cinnamon.

6. Garnish with nuts and Cinnamon
Sprinkle chopped mixed nuts over the lassi. Dust a little Amara Spices C5 Ceylon Cinnamon powder on top.
For a simple cinnamon swirl, use the back of a small spoon or a skewer to gently move the cinnamon dust in a circular motion on the surface. Keep the movement light. You want a soft swirl, not a fully mixed top.
This final garnish makes the drink look festive and adds aroma before the first sip.
